Stir-fried dried fish


Dried fish are a lovely addition to Sri Lankan food. Dried fish are heavily salted but when u deep fried they become crunchy. There are a lot of different variety of dried fishes are available in the local stores. Here i have used “Katta Dried Fish” (Queen Fish) for my recipe. Even though it is served as a side dish, for me i can have this stir fired dried fish with only plain boiled rice. It will taste heaven for me. When ever i’am running out of time to cook, this easy recipe will save my time and make my tummy full.
 

Ingredients:-

Dry Fish 200g
Tomatoes 2 (chopped   into chunks)
Onion 1   Large (Sliced)
Curry   Leaves 1   Sprig
Cloves   of garlic 3   (sliced and crushed)
Green   Chili 2
Red   dry chili flakes 2 TSP   (Pounded)
Turmeric   Powder 1 TSP   (Ground)
Salt 1 TSP   or to taste
Oil 3 TBS   (To temper)
Oil For   deep frying

Method:-

  • Cut and clean dry fish by soaking it in warm water for 5 minutes and then set it aside to dry.
  • Heat the oil in a large wok and deep fried the dry fish over moderate heat.
  • Heat the oil in a pan and fry the onions, garlic, curry leaves and green chili.
  • Once the onions starts to brown and soften add the tomatoes along with red chili powder, turmeric powder and salt to taste.
  • Finally add the fried dry fish and stir.
  • Keep stirring and cook for further 5-6 minutes until the dry fish well coated with other ingredients.
  • Serve hot with white rice as a side.

Wattakka Kalu Pol (Pumpkin curry) 


Wattakka Kalu Pol – Kalu pol we used as a Thickening  and flavoring  agent to the food.it bland with pumpkin well.you make cucumber,kakiri as well.this is a combination of rice and coconut fry in very slow fire.pumpkin you find every weir in sri lanka.and easy of cooking, pumpkin dishes give high value to sri lankna ayuradic cooking.

  • cut the pumpkin to to cubes,prepired all other Ingredients before.
  • mean while make the kalupol mixture,(roasted grated coconut and roasted raw rice pound together to a smooth powder.
  • add all Ingredients to the clay pot with pumpkin,mixed it well,add some water too.
  • cook for few minutes,mean while mixed kalupol mixture with think coconut extract ,add to the curry .
  • allow to cook for another few minutes,season with salt and pepper. 

This curry really delicious with rice try it and comment us

Honey baked Sri Lankan chicken 

Ingredient

  1. 400 grams chicken pieces (jointed)
  2. 3 tablespoons soy sauce
  3. 1 tablespoon soy oil
  4. 1 teaspoon chilli powder
  5. 2 teaspoons Sarogini’s curry powder
  6. 1 teaspoon ginger paste (freshly ground        best)
  7. 1 teaspoon garlic paste (freshly ground best)

  8. 1 level teaspoon salt
  9. 1 tablespoon honey

10. 1 tablespoon sherry
11.1 tablespoon butter 


Method


1. Select good joints of chicken (eg thigh and drumsticks). Skin may be removed if preferred.

2. In a bowl mix together the soya sauce, soya bean oil, chilli powder, curry powder, ginger paste, garlic paste, salt, sherry and honey.
3. Pour mixture over chicken pieces, mix well and marinade for at least 4-5 hours. (Ideally 12 hours would be best).
4. Place chicken joints neatly on baking tray. Pour balance of marinade over the chicken.
5. Brush chicken pieces with butter.
6. Turn oven to 180 degree F.
7. Place tray in over and bake for about 45 minutes.
8. Turn pieces over and bake for another 10 minutes until golden brown and then serve.
  

It's taste is sweet but spicy  too............ try it.

Fried Cuttlefish Curry 


Fried Cuttlefish Curry : Sri Lanka is a small island and it is very famous for seafood. cuttle fish tempered for few minutes,and simmer in spicy curry sauce.always love to have in there lunch.high contain of protein in here.


Ingredients

  • 250 g Cuttle fish
  • 1 onion sliced
  • 1green chilli sliced
  • some ginger and garlic past
  • 1/2 tsp Fenugreek
  • 1 tsp chili powder
  • 1 tsp chopped tomatoes
  • 100 ml coconut milk with 1/2 mustered past mixed togather
  • crushed pepper
  • diced tomatoes
  • salt

Method

  1. Heat the oil,add all Ingredient to the pan and saute for a while
  2. add the cuttle fish ,just fry for few minutes in medium heat.let it cook
  3. add coconut milk,tomatoes and chopper tomatoes and mixed well
  4. Let the sauce get thick,add salt and pepper and finish.
  5. Ready to served with rice and curry or with sri lankan fried rice.

Chicken Kebabs with Spiced Yogurt Sauce 


Chicken Kebabs with Spiced Yogurt Sauce is one of easy way of doing chicken,and this dish have some influence of Indian cooking as well.and many Sri lakans do use chicken dishes very often in there meals.this is some other option for chicken curry.


Ingredients

  • 100 g Chicken cubes
  • 1 onion chopped
  • tomato chopped
  • 1/2 tsp chili pieces
  • some mint leaves
  • 100 g yogurt
  • salt
  • pepper
  • some oil
  • 1 lime juice


Method (cook chicken kebab)

  • some olive oil
  • lime

      

Method

cut the okra and rub with tumaric and salt,deep fried the okra and allow to drain oil.
take a bowl,add all ingredients together and mixed with salt .pepper,lime and olive oil 
lime is the special thing in this salad because it increase  the salad taste.

cashew nut curry

 
This is a very famous dish in Sri Lanka, specially in occasions like weddings & arms-giving ceremonies.
I love cashew nut curry very much and have been tried it for so many times.
so I decided to share the recipe with you also who love The Kaju Maluwa just like me.
Hope you will like this recipe.

Try it by your self....


INGREDIENTS:

 
  • 200g cashew nuts
  • 1 medium onion – sliced
  • 3 – 4 tablespoons garlic – finely chopped
  • 2 tablespoons ginger – finely chopped
  • 3 tablespoons black pepper powder
  • 2 – 3 tablespoons (Sri lankan roasted curry powder)
  • ½ teaspoon turmeric
  • 2 cups coconut milk
  • 4 – 5 tablespoons oil
  • 5 – 6 curry leaves
  • Salt to taste


Method

Wash the cashew nuts and soak it for overnight.
Then drain the water and place it in a medium size bowl.
Now mix all the spices with cashews (black pepper, turmeric, salt, Sri Lankan roasted curry powder) and keep it aside.
Heat the oil in a medium saucepan, in medium heat.
Then add curry leaves, chopped garlic & ginger, and fry it for 1 minute, then add onions and fry it nearly 5 minutes.
When onions are ready, add the cashew mixture, and mix it well with onions.
Keep it on heat nearly 5- 10 minutes.
Then add coconut milk and cook it till you get little bit gravy.
Taste for salt.
 
1. If you forget or you don’t like to soak the cashews overnight, just boil it with water, till cashews get soft.
2. If you are using a spoon to stir the curry, remember not to break the cashews. OR just shake the saucepan when you want to stir the curry.

 

SERVING:

You can have cashew nut curry with any kind of rice, noodles or any dish you like.
