Chicken and Mash Potato Bake

Ingredients:
  • Mashed potatoes – 3 cups
  • Grated Cheddar cheese – 1 cup
  • ½ cup French Fried Onions
  • 1 ½ cups cooked chicken cut into small cubes
  • 1 ½ cups mixed vegetables (carrots, peas, corn and celery)
  • 1 can (10-ounce) cream of chicken soup
  • ¼ cup milk
  • Mustard cream – ½ teaspoon
  • Garlic powder – ¼ teaspoon
  • Black pepper powder – ¼ teaspoon

 Method:

Preheat oven to 375 degrees Fahrenheit.
Combine the mashed potatoes, ½ cup cheese and ¼ cup French Fried Onions and mix thoroughly. Set aside.
Grease a 1 ½ quart casserole dish and spread the mash potato mixture onto the bottom and sides of the casserole dish. The mash potato mixture will act as a shell.
In another bowl combine the chicken, mixed vegetables, soup, milk, mustard, garlic powder and pepper. Pour into the potato shell.
Bake in oven for 30 minutes. Remove from oven and sprinkle the balance ½ cup of cheese and ¼ cup French Fried Onions and bake again till cheese melts.
