Leeks Fried With Maldive Fish And Chili - Leeks Mirisata

Serve this leeks fried with Maldive fish as an accompaniment to any rice meal. This recipe is really quick and easy to prepare. Leeks are very much part of the Sri Lankan cooking. Leeks are similar to garlic, onions, shallots and scallions but sweeter and more subtle.

Ingredients:-
Leeks (thinly sliced)4
Maldive fish (pounded)2 TBS
Crushed Red Chili1 TSP
Turmeric powder½ TSP
Salt1/2 TSP or to taste
Oil3 TBS

How I made it:-
  • Rinse the leeks and slice thinly. Set aside.
  • Heat oil in a large wok over low heat.
  • Add the leeks and cook for 5 to 7 minutes.
  • Stir in the ground turmeric and crushed chili with salt.
  • Stir for 1 minute.
  • Add maldive fish, cover and cook for 20 minutesstirring occasionally.
  • When the leek has reduced in volume uncover and cook until little dry.
  • Serve with rice and other curries.
