Spicy Grilled Pork Spareribs

Ingredients:
  • 3 pound (1.360 kg) rack of pork spareribs
  • Butter – 2 tablespoons
  • 1 onion chopped
  • Minced garlic – 2 cloves
  • Tomato sauce – 15 ounces
  • 2/3 cup vinegar
  • 2/3 cup brown sugar
  • Chili powder – 2 tablespoons
  • Mustard cream – 1 tablespoon
  • ½ teaspoon pepper powder
Method:

Rinse the pork spareribs under the tap, pat dry and set aside.

Heat the butter in a skillet over low heat.

Sauté the onion and garlic in the butter until slightly brown. Then add the tomato sauce, vinegar, brown sugar, chili powder, mustard and pepper powder. Cook uncovered on low heat for 20 minutes stirring occasionally.

Get the grill ready. Baste the ribs with the sauce and place on grill (meatiest side facing down). Close the hood of the grill and cook for 15 minutes. Open the hood and turn ribs and baste with the sauce. Close the hood again and grill for another half an hour or until ribs are done. Don’t forget to baste the ribs with the sauce every 15 minutes.

Cooking Ribs in the oven

If you choose to cook the ribs in the oven follow the following steps:

Preheat oven to 325 degrees Fahrenheit.

Take out a baking pan and cover the bottom and sides with aluminum foil.

Arrange the ribs in a single layer (meatiest side facing down). Do not stack the meat over each other since the pieces might not cook properly.

Pour the sauce over the ribs. Cover the pan with aluminum foil and bake for 1 hour.

Remove the ribs from oven. Increase the temperature to 375 degrees Fahrenheit and put the ribs back into the oven. Bake uncovered for another 15 minutes.

Serve warm.
